Lemon Vegetable Soup




This was just way too good to not share. I make vegetable soup often (already posted something like this a week or two ago) but oh my gosh… YUM!! So delicious and hearty. The lemon grass and lemon juice really give this soup an amazing flavour. As always, it’s loaded with veggies including my favourites (kale and spinach). Perfect for this cold winter day today! 🙂


2 potatoes, cubed

2 large carrots, chopped

1 cup chopped kale

1 cup chopped spinach

1/2 cup snow peas

1/2 cup celery, chopped

1/2 green beans, chopped

3 bay leaves

2 tbsp fresh basil

2 tbsp fresh lemon grass

1 tsp fresh dill

1 cup quinoa

1 can organic diced tomatoes

Broth: tons of lemon juice (really didn’t measure, just know I used a ton of it), 2-3 cups water, 2 low sodium chicken stock cubes, lots of italian seasoning, thyme, dried coriander, and ground black peppercorn.
