Feeling super lazy tonight in terms of cooking, so I made dinner and dessert in less than 15 minutes. Dinner was super easy and quick. Whole grain pasta with fresh walnut basil pesto. As for dessert, one of my favourite snacks lately – a banana split, but not the kind you’re thinking with sugar and ice cream galore. Simple, easy and filling! Perfect.
1/3 cup fresh basil
3 tbsp raw walnut pieces
3 tbsp extra virgin olive oil
1/3 cup cherry tomatoes
1 tsp ground black peppercorn
1 cup whole grain pasta
For banana snack/dessert: 1 banana, raw almond butter, natural peanut butter, nutella, unsweetened coconut, goji berries.
1. Combine fresh basil and olive oil into food processor or blender. Mix until a paste is created.
2. Cook whole grain pasta (I used spaghetti) on stove top for 12-15 minutes or until pasta is cooked.
3. Strain pasta, and rinse.
4. Add pesto to pasta, and garnish with cherry tomatoes, raw walnut pieces, a bit of olive oil and ground black pepper.
5. Top your banana with raw almond butter, natural peanut butter, or as a treat, some nutella. Sprinkle unsweetened coconut and goji berries.
