Creamy Thai carrot and sweet potato soup. I followed the recipe from @ohsheglows but added a can of coconut milk to really make it creamy. Served with a hearty spoonful of jasmine rice. Such nice flavours 👌🏼
Don’t you wish you could just look a pic on your feed and then magically that dish will be in front of you? Lol #lazyprobs. Split pea soup with potato and pea samosas sound good right about now. Instead it’s going to be a sweet potato and salad night, which I am fine with too.
These mini lentil & veg shepherd’s pie are great for meal prep, if that’s your thing. Recipe is on the blog archives. Thinking about making some this weekend (we shall see).

It’s Friday and it appears that winter has made a comeback. I’m over here just wanting all of the fresh fruit. So... with that, here is a watermelon, golden pineapple, sable grape and apple smoothie. It did the trick, for now 😏.
Holiday Mondays are the best. With that... comes some no bake brownie bites. 3/4 cup steel cut oats - rolled oats work fine too - pulsed into a flour using the Vitamix blender), 1/2 cup almond butter, 1/3 cup maple syrup, 1 tsp vanilla extract, 1/2 cup unsweetened cocoa powder, 2 tbsp almond milk, 1/2 cup chocolate chips. Pulse the oats into a flour using a blender. Mix almond butter and maple syrup together and melt in the microwave until smooth. Then add to the flour, and add the vanilla, cocoa, and almond milk. Fold in chocolate chips. Knead dough a bit with your hands if easier or use a spatula. Roll into small balls. Makes about 15-20. Place on a baking tray lined with parchment paper and freeze for 15 mins. Store in an airtight container in the fridge or freezer and take out when you want something rich but healthier 😊

Happy Valentine’s Day everyone! Don’t have any sweets for you, but rather some soup 😋 cause what better way to show someone you love them in the winter than make some homemade comforting soup to warm their soul? Right? Lol. Thanks for all of the love on my last post by the way ♥️

Super Bowl Sunday! What snacks are you having? I dunno about you, but I’m all about these cheesy slightly spicy scalloped potatoes. And of course salsa, chips, dips lol. Patriots or the Eagles? Doesn’t matter to me, but looking forward to seeing JT perform at the half-time show. #superbowlsunday
Aside from avocado toast, really been digging almond butter and strawberry jam toast 👌🏼 Fav toast toppings? Humming with slices toasted is also delish!
Thinking about making some lentil and farro stew... it’s got the best warm spices! Recipe below. How’s your Tuesday going? Heat 2 tbsp extra virgin olive oil in a large pot, over medium-low heat. Add 1 cup finely chopped white onions and 3 cups sliced carrots to the heated oil. Cook while stirring occasionally for about 8 Minutes. Next, add in 1 tbsp minced garlic and add to the pot. Cook for 2 minutes with the other ingredients. Add 2 tsps ground cumin, cook for 1 more minute. Add 1 cup dried (and rinsed) green lentils, 1 medium sized potato - peeled and cubed, 5 cups vegetable stock, 3 cups diced tomatoes with juices (low sodium), 1 tbsp brown sugar, and 1 cinnamon stick. Bring to a boil and reduce heat slightly. Cook for 10 mins. Add 1/2 cup of rinsed farro and cook for 45-60 mins or until lentils are tender. Stirring occasionally. Stir in 1/3 cup chopped collard greens and 1 tsp dried sweet basil. Season with sea salt and black pepper.

Green juice - what’s your fav? Green apple, kale or spinach and lemon has always been a fav. Confirmed for sure that I am not a fan of adding spirulina to smoothies or juices, just takes over the taste of everything else. Prefer to take it as a capsule, anyone else have combos to mask the taste of spirulina? Lol. Taking suggestions.
