Coconut Cashew Cookie Larabar Bites

Winter has arrived. We woke up to a white winter wonderland. That’s okay, because we just put up our Christmas tree yesterday. We’re entering that time of the year.

I’m looking forward to the holidays for some time-off, time spent with friends and family, and of course, the food. Who doesn’t love the holiday season!?

We are on day 20 of the Whole 30 (Vegan Whole 30 for me). It’s going so well, can’t wait to share the experience and all that we have learned in December ๐Ÿ™‚

Anyways…

We made some coconut cashew cookie larabar bites yesterday. Mike loves them.

They are:

  • SO easy to make
  • Have only three ingredients
  • Satisfying
  • Filling
  • Healthy
  • Refined sugar-free
  • A perfect little guilt free treat

*Note: Requires a food processor.ย 

Ingredients

Roughly 36 pitted medjool dates (We get a huge bag at Costco for a little over $6)

1.5 cups raw unsalted cashews (Also get this at Costco, a 1kg bag for $16)

Unsweetened shredded organic coconut (Whole Foods, or wherever…ours was $6).

As you can see, it’s much cheaper to make your own than buy the bites or the bars in stores at $2 a bar.ย 

Process

Place the small medjool dates into the food processor.Chop them if they are bigger, will help with the chopping.

Add the TINIEST bit of water to help get it all going.

Process until a date paste is created.

Next, add in the raw cashews. Process until well-combined and a dough is formed.

Now roll out the dough onto parchment paper, using a rolling pin.

Grab pieces and roll into small balls with your hands.

Roll the bites in the unsweetened coconut.

Refrigerate for a half hour or so. Store in an air-tight container.
